You can do the double duty thing with a PC, but like I said, it's not as stable.
It does not, however, load on a NAS (except, perhaps, a NAS built on Windows Storage Server). I can't recall if it loads on a PC OS or just a server OS, but it probably does. QB has a server component that loads as a Windows service.
There are other benefits of a server, but in a small office like yours this is probably the most important. Consequently they tend to not "freeze up" like PCs often do. People aren't using them to browse the web, listen to iheartradio, etc. In a three person office this might be considered overkill, but servers provide a central, stable host for data. You can get a cheap HP Micro and Dell just announced a competitive product. The only other suggestion I might make is that you store it on a server. It looks to me like there is only one version of Quickbooks premier available, and that it is designed to work with a single data store on one computer and that other computers access that shared file, or folder of files.
